FCC food grade liquid calcium chloride is used primarily in the food and beverage industry in processing or packaging applications where Food and Drug Administration (FDA) approval for use of a briners grade is not acceptable. Calcium chloride increases the firmness of fruits and vegetables including tomatoes, cherries, olives, and pickles. It also prevents breakup during processing and cooking. In cheese processing, calcium chloride is added to pasteurized skim milk to help coagulate the curds, increase firmness, and replace calcium lost by heating. Water used to manufacture soft drinks and beer is first demineralized and then remineralized with calcium chloride to assure uniform taste, regardless of the processing location.
